Lunch by the Glass

Every day Kate and I share part of our lunch together. It’s cold. It’s healthy. Any guesses what I could make every day that a toddler would never tire of eating? Kate squeals with delight when she hears the blender roaring and says, “Soothie!” Here’s my Smoothie “recipe” that I throw into the Vitamix (my fabulous blender) each day:

1 whole banana

1 whole apple (take core out with apple slicer)

1 whole orange (peeled, of course)

1/2 cup fresh blueberries

1/2 cup Lowfat Strawberry Yogurt (I use Trader Joe’s organic)

1 cup frozen Strawberries (Costco has great big bags of these!)

1 scoop Juice Plus Complete (vanilla)

1 Tablespoon Flaxseed meal

Kate drinks this every day and sometimes cries when it’s all gone! On Sundays, Greg doubles it and makes an enormous one for all 3 of us. Try it. You’ll be hooked.  When they’re in season, peaches are GREAT in this!
